I've found that telling people I'd like to speak Japanese as far as possible (dekiru dake, a very useful phrase) is helpful, since it lets them know what I'd prefer while offering me an out later on if the talk goes beyond my abilities. But that only works with longer interactions, not when you're buying street food, etc.
