They are aware of the English bias, and have made some effort to correct it - witness the Welsh lovespoon in the grounds, for example -

They also try to provide food and drink from all four nations - but this is definitely an English village. And it's definitely a village, not a city. And it's definitely old-fashioned (eiderdowns not duvets in this gaff!). So it's selective - partly catering to visitors' expectations and fantasies, naturally (as all tourist destinations do), as well as educating.
